½ cup undeniable yogurt
3 tablespoons more-virgin olive oil
2 tablespoons cider vinegar
1 tablespoon fresh lime juice
2 teaspoons granulated sugar
1½ teaspoons kosher salt
1 teaspoon ground cumin
½ teaspoon freshly ground black pepper
SLAW
1 small jicama, around 1 pound, peeled, quartered, thinly sliced, and julienned
½ low brain green cabbage, thinly sliced (4 cups)
2 superior, ripe Granny Smith apples, quartered and thinly sliced
½ red onion reduce within 50 percent and thinly sliced
½ cup about chopped fresh cilantro leaves
1. in a heavy bowl whisk the dressing ingredients. add the slaw ingredients to the bowl and throw with the dressing.
2. Enable the slaw stand at area temperature for 20 minutes, tossing from time to time, in advance of serving.
